Protein Pancakes

These pancakes are fantastic! I use an immersion blender by Kitchen Aid to whip my pancakes up in the morning. This recipe couldn't be easier! Just to let you know, the cooking time takes a little longer than your regular pancakes but it's still very quick.


Ingredients:

1 c. rolled oats, uncooked
1 c. cottage cheese
6 egg whites
1 t. vanilla
freshly grated nutmeg

Method:

Blend until smooth. Pour on medium heated pan. Wait a few minutes on each side before turning.

Serves 2
