Tomato Orzo Salad

I have made this recipe so many times. It is so easy and has always been a hit to whatever party or function I attend. Sometimes I will add grilled chicken to make it a main dish. You can experiment and add other things like Katamala olives and toasted pine nuts. You could even do fresh mozzarella balls in place of the feta cheese.

Ingredients:

3 lbs. vine ripened tomatoes, seeded and chopped OR (if you live in Seattle and there are no good tomatoes to be found) use 1 each red, yellow and orange bell pepper, seeded and chopped
1 (16 oz.) box orzo pasta, cooked
1/2 c. extra virgin olive oil
1/3 c. minced fresh chives
6 T. chopped fresh basil
4 cloves garlic, minced
1 T. lemon zest (about 4 lemons)
salt and pepper to taste
1 c. crumbled feta cheese

Method:

1- In a large bowl combine tomatoes (or peppers) and orzo.

2-In a small bowl combine oil, herbs and lemon zest. Pour over orzo and toss well. Season with salt and pepper.

3- Sprinkle with Feta cheese on top.

Serves 8-10
